Honning marinert lammefilet med asparges salat
Sjømat burde vært en naturlig valg i dag, som jeg vandre
mellom fiskebåter, fiske restauranter, fiske markedet og Royal Tasmanian Yacht
Club, hvor den berømte hav seiler konkurranse slutter på hvert år her nede i
Hobart, Tasmania. Men nei. Valg i dag faller på lam. En favoritt av min og
mange flere. Her nede, er lam lett og billig å få tak i. Australia har vel like
mange sau som mennesker. Ikke akkurat det samme i Norge, da lammesesonger er nesten
ferdig nå, men fremdeles gå det an å kjøpe eller bestille god kjøtt. Kjøttet
skal marinere overnatte. Bortsett fra det, er det fort og enkelt, og dermed
passer bra for det fleste av oss og hvis du gidder å begynner dagen før med
marinering er det «nesten» en imiddag x 5d = 30m med en smak og spennende
kombinasjon som egner seg til en fest måltid. Marinere lammefilet i varm melk
og varmet honning, hvitløk, cumin og oliven olje. Neste kveld, brun lam i
oliven olje og stek ferdig i ovn. Mens lam er i ovn, kok asparges og avkjøle
fort. Resten av salaten består av estragon, mynte, vårløk, paprika og geitost.
Dressingen er også enkelt – oliven olje og sherry eddik, og tilslutt, ristet
valnøtter og fennikel frø er drysset over salaten. En lett «de glaze» eller «jus»
lages fra oliven olje og lam smaken fra stekepannen, sitron saft og honning.
Ikke lett å beskrive smakken av hele middagen, Moroccan? Ikke minst helt topp
fra down under. Har du hørt at Tasmania produsere vin? Jeg akkurat sjekket på
polet og de har flere Tasmanian viner – løp og kjøp!

Seafood should have been a natural choice
today, as I wandered between fishing boats, fish restaurants, seafood markets
and the Royal Tasmanina Yacht Club, where the famous ocean yacht sailing
competition ends every year here in Hobart, Tasmania. But no. My choice falls
upon lamb, a favourite of mine, and many others. Down here, lamb is easy and
cheap to get a hold of. Doesn’t Australia has just as many sheep as inhabitants?
Not quite the same in Norway though where the lamb season is nearly finished,
however it is still possible to buy or order good meat. The meat is marinated
overnight. Apart from that, it is really easy and quick, and as such, suits the
most of us, and if you have time to begin with the marinating the night before,
it almost passes for an “imiddag x 5d =30m” with a taste and exciting
combination that applies to a special occasion. Marinate the lamb in warm milk
and warm honey, garlic, cumin and olive oil. The next evening, brown the lamb
in olive oil then finish it off in the oven. Whilst the lamb is in the oven,
cook the asparagus and cool down quickly. The remainder of the salad is
tarragon, mint, shallot, capsicum and goat cheese. The salad dressing is also
very simple – olive oil and sherry vinegar. At the end, sprinkle roasted
walnuts and fennel seeds over the salad. A light de glaze or “jus”, is made
from the olive oil in the lamb pan, lemon juice and honey. It is not easy to
describe the taste of the meal, Moroccan? In the least top, from down under.
Have you heard that Tasmania produces wine? I just checked with the Norwegian government
wine monopoly shop, and they have several Tasmanian wines – run and buy!
